Apple Pie Pancakes

Hey guys! 

It’s Pancake Day on Tuesday so today’s post will feature a couple of pancake recipes: basic pancakes and apple pie pancakes. I’ve always loved pancakes – they’re so delicious and you can top them with whatever you fancy! I tend to stick with simple lemon and honey, as I always have them at home, but sometimes I like to add bananas or Lotus Biscoff or go savoury!

Before I share the recipes, I’ll give you a brief summary of the origins of Pancake Day. Also known as ‘Shrove Tuesday’, Pancake Day falls on a different date between the middle of February and beginning of March each year, but it happens on the day before Ash Wednesday – the first day of Lent. During the Middle Ages, people would eat pancakes or other food made from butter, eggs and fat that they’d give up for Lent. Originally, Christians weren’t allowed to eat meat and dairy during Lent, but now people refrain from anything during the 40 days of Lent – from using social media to drinking alcohol to consuming chocolate.

How to make a basic pancake

Ingredients:

  • 1 cup (125g) plain flour
  • 1 egg, beaten
  • 1 cup (125g) milk
  • 2 teaspoons baking powder
  • 2 tablespoons vegetable oil

Method:

  1. Mix flour and baking powder in a large bowl.
  2. Make a well in the centre and pour in the milk, egg and oil. Mix until smooth.
  3. Heat a lightly oiled frying pan over medium heat. Use a ladle to scoop the batter in the pan. Cook until brown on both sides.
  4. Serve with any topping you like – blueberries, bananas, Nutella, ice cream, Lotus Biscoff etc.

How to make Apple Pie Pancakes 

When I spotted a recipe for apple pie pancakes on Averie Cooks, I knew I had to try it! Apple pie pancakes are perfect in winter as they’re full of warming spices, like cinnamon and ginger, which also have benefits for your health: cinnamon has anti-viral properties and is easy on your stomach, while ginger helps you fight colds and flus.

Apple pie pancakes do take a while to prepare, so it’s best to make them when you’re not in a rush. I did make a few changes to the original recipe, for example I omitted the baking powder and swapped all-purpose flour for plain flour, ground clove for ginger & maple syrup for honey. This recipe makes between 4-5 pancakes, depending on the level of thickness.

 

Ingredients:

  • 1 cup (125g) plain flour
  • 1 egg, beaten
  • 1 cup (125g) of milk
  • 2 tablespoons vegetable oil
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1 teaspoon vanilla extract
  • 3/4 apples

Directions:

1. Mix the flour, cinnamon, nutmeg and ginger in a large bowl. Leave to the side.

2. Grate one apple (it should fill one cup). Then chop the remaining apples into wedges. Sautee with a little cinnamon until they get soft. This should take you about 5 minutes. Put the sautéed apples on a plate and leave to the side.

3. Measure out the milk into a small bowl and add the egg, vegetable oil and vanilla extract. Beat until combined.

4. Add the milk mixture to the dry ingredients and mix until there are a few lumps left.

5. Gently fold in the grated apple. I’d recommend adding a spoonful at a time rather than pouring the whole thing in.

6. Preheat the frying pan over medium heat and allow a knob of butter to melt.

7. Scoop one ladle-worth of batter into the frying pan. Cook until small bubbles form on the surface of the pancakes and then flip. Reduce the heat to medium and cook for a further minute, or until brown.

8. Serve the pancakes immediately with the honey and sliced apple.
